“ [Ibaraki] BEST OF 2025⁉︎ A supreme moment that's not just about the sushi, but also the space, conversation, and comfort. Sushi Ono Inashiki, Ibaraki. This was my first visit to the Inashiki area, and it was a truly otherworldly and refined restaurant. The feeling was immediately apparent upon approaching the restaurant. My mysterious sense of knowing I was in for a wonderful time was not misplaced. It was truly a continuous, satisfying experience. First of all, the atmosphere. Before and after entering the restaurant, of course, the atmosphere was friendly, the lighting, and the gentleness of the staff were all just right. Even though it was my first time there, I felt at ease. At this point, I knew this was a wonderful restaurant, and all that was left was to surrender to the chef's omakase. The Chef's Omakase Course (¥27,500) featured not only excellent sushi but also exquisite individual dishes. While everything was so delicious it would be endless to list them all, the wild mozuku seaweed and whale were particularly impressive. The mozuku seaweed had a texture I had never experienced before, and the whale meat was so rich and flavorful with red meat that I wanted to keep eating it. As for the sushi, it's hard to choose a better one, but the horse mackerel and conger eel were definitely on the menu. The classic red meat and chutoro were delicious, and the Lake Biwa salmon was particularly impressive, especially for something more unusual. And above all, the chef had the air of a handsome older man. There was a clean atmosphere, no waste in a good way, and I felt a quiet, solid, passionate, and kind heart. And since the sushi was made by such a chef, it was bound to be delicious. Although it's an area I don't often visit, I was fortunate enough to have discovered it unexpectedly on social media. I would definitely like to return here again. Thank you for the wonderful space and time. ”
